A Quinoa Recipe Even Mike Loves!

Ok, I love Quinoa. Elliott loves quinoa...Mike and Lucy, not so much. Last night I tried this recipe and everyone loved it! So, I thought I'd share. We ate the corn and jalapeno recipe--the second one, but Ruth says Jeremy doesn't like corn so I also included the Bell pepper recipe--the first one. Incidentally, I don't like Bell peppers so Ruth, you will have to tell me how that one goes! 
Morgan and Christa, don't try them yet, I want to make it when I get there!

An AMAZINGLY yummy recipe to try! :)

If loosing weight tastes this good, I think I'll keep going! :)

Pot Pie!

4 medium carrots, sliced
3 medium potatoes, chopped
1/3 cup whole wheat flour
4 Tablespoons melted coconut oil
4 cups vegetable broth (I mix my own with Homemade Vegetable Broth Powder)
1 teaspoon poultry seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups mushrooms of choice (I have used chopped Portabello, fresh sliced, or canned sliced when I didn't have fresh;)
1 Large onion, chopped
2 cups Frozen green peas
Biscuit Topping (recipe below)

Cook carrots and potatoes in water in saucepan until tender-crisp.
Blend flour into melted coconut oil in medium saucepan over low heat.
Cook for 3 minutes or until smooth and bubbly, stirring frequently.
Stir in vegetable broth gradually; increase heat to medium. Cook until thickened, stirring constantly.
Stir in poultry seasoning, salt, pepper.
Place chopped onion, mushrooms, and frozen peas in baking dish or dishes. (I have used a deep cake pan or 2 deep 9 inch pie pans. If they are small pie tins you could probably use three or 4 my deep dish ones were really full. You can see in the picture that they some spilled over the sides while cooking;)
Drain carrots and potatoes place them in the pan also.
Pour in broth mixture over the vegetables.
Top with Biscuit Topping.
Bake in preheated 400 degree oven for 45 minutes or until topping is golden brown.

Biscuit Topping
4 cups whole wheat flour
2 Tablespoons baking powder
1 teaspoon salt
2 cups rice milk
8 Tablespoons olive or coconut oil

Mix flour, baking powder and salt in medium bowl. Add milk and oil all at once; mix just until moistened.
 
 
note, it makes A TON!!

The intro!

Hey family!!

Ruth and I were talking a couple weeks ago about how everyone is dieting and began talking about doing a Johnson Family biggest looser.  Then nothing else was said about it, UNTIL TODAY! We have decided to actually put together a Biggest Looser for any family members who want to participate.  We want everyone to join in that is interested and we have not laid down all the guidelines yet because we want input from others on rules.  So far, we have decided that everyone who wants to participate is going to pay a $20 "joining fee."  All the money will go together and be the Grand Prize.  The contest is going to last for 3 months after the starting date has been set (shooting for Monday the 13th if we have gathered the names of everyone who wants to participate!)  At the end of the three months who ever has lost the most body weight percentage will win!!!  Ruth is going to put together a blog that will have all the rules that everyone has decided on posted to it, then everyone will be given the user name and password so they can post updates on the blog!  the blog can be used for progress posts, pictures, encouragement, and of course, A little friendly competition!!! HA!!!

This is open to all adults and their spouses or other half!! Remember, the more people who enter, the bigger the prize!!

If you are wanting to participate let us know!! We will keep sending out updates and calling and all that fun jazz!!!

If you have any suggestions on rules or anything at all let us know!! Nothing is set in stone yet!!
